30 Minutes or Less... Garlic Lemon Scallops


This dish is beyond delicious and incredibly easy to make. Start to finish it will be complete in less then thirty minutes, but tastes like a gourmet masterpiece. Best part... it is also Whole 30 compliant.


Ingredients:

  • One bunch of asparagus, trimmed

  • 1 tbsp of olive oil

  • 3 tbsp of garlic, minced

  • 1/2 of lemon, juiced

  • 3/4 cup of Ghee

  • 1 1/12 pounds of scallops

  • Sea salt and pepper to taste

  • Bottle of Champagne (optional and skip if on Whole30)



Directions:

1. Heat oven to 425 degrees. Top a baking sheet with foil and arrange asparagus on top, drizzle with olive oil, sea salt and pepper. Roast for 12-15 minutes.

2. Open a bottle of Champagne and enjoy while preparing this easy dish. It will pair perfectly with your dinner. (optional and skip if on Whole30)



3. Heat sauté pan on medium and melt Ghee, add minced garlic for a minute.

4. Season scallops on both sides with sea salt and pepper. Add Scallops and cook for two minutes. Flip and cook for an additional two minutes until scallops are firm and opaque. Remove Scallops from pan and set aside.


5. Turn stove to low and add lemon juice to pan and season with salt and pepper.

6. Serve scallops on top of asparagus with garlic lemon butter on top.
